Authentic Chicken Teriyaki

Ingredients:
- 1 piece deboned chicken thigh
- Leeks
- Ginger
- 3 tbsp cooking oil
- 3 & 1/2 tbsp mirin
- 2 & 1/2 tsp Kikkoman or any Japanese soy sauce
- 1 tsp white sugar
- 1tsp dashi or aji no moto
How to Cook Authentic Chicken Teriyaki:
- Cut some slits on both sides of the chicken.
- Preheat oil. Then fry the chicken on low to medium fire (starting on the skin side of the chicken).
- Lower the flame. Remove excess oil by wiping with kitchen paper.
- Add in all the remaining ingredients. Stir and let it simmer.
- Turn the chicken and let it cook until the sauce thickens.
- Lower the fire.
- Baste the chicken with its own sauce until it fully absorbs all the flavors.
- Turn of the stove.
- Serve while it's hot.
